Philadelphia Cheesesteak Soup
Ingredients:
* 18 ounces rib eye or eye roll steak, frozen, then thinly
sliced
* 2 tablespoons butter
* 1 medium onion, cut in thin wedges
* 1 medium green bell pepper, cut into strips
* 11 ounces cheddar cheese soup or cheese sauce
* 1/2 cup milk
* 1/2 cup water
* 2 tablespoons Parmesan cheese, grated
* Salt and pepper, to taste
Directions:
Cut each sandwich steak into 1/2-inch strips. In 2-quart saucepan over medium
heat, melt the butter, the cook onion and green pepper until tender, stirring
occasionally. Add steak strips. Cook until meat is browned, stirring often.
Stir in soup. Gradually stir in milk, water and cheese. Heat through.
New England Clam Chowder
Ingredients:
* 6 bacon strips, diced
* 1/2 cup finely chopped onion
* 2 cans (10 3/4 ounces each) condensed cream of potato soup,
undiluted
* 1 1/2 cups milk
* 3 cans (6 1/2 ounces each) minced clams, undrained
* 1 tablespoon lemon juice
* 1/4 teaspoon dried thyme
* 1/4 teaspoon pepper
* Minced fresh parsley
Directions:
In a large saucepan, cook bacon over medium heat until crisp; remove to paper
towels. Drain, reserving 1 tablespoon drippings.
In the drippings, sauté onion until tender. Stir in soup and milk. Add
the clams, lemon juice, thyme, pepper and bacon; heat through. Garnish with
parsley. Yield: 5 servings.

Old Fashioned New England Clam Chowder
Makes 8-10 servings. From Daniel Pace.
* 4 dozen medium hard-shelled clams
* 6 cups cold water
* 2-inch cube salt pork
* 1 large onion
* 4 medium potatoes
* Salt and pepper
* 2 cups hot milk
* 1 cup hot light cream
Wash clams thoroughly. Place them in deep saucepan, nearly covered with cold
water; bring to boil. Boil gently 10 minutes, or until shells open. Strain broth
through cheesecloth and reserve. Remove clams from their shells. Clean and cut
each clam in half. In same deep saucepan, fry diced salt pork. Add minced onion;
cook slowly until it begins to turn golden brown. Add clams and reserved broth.
Skim well, if necessary. Add potatoes (peeled and diced); season with salt and
freshly ground pepper. Cook until potatoes are tender. Remove mixture from heat;
slowly add milk and cream, which have been heated. Serve immediately.

Philly Cheese Steak
Makes 4 servings. "My Philadelphia friends claim this comes straight from Pat's
King of Steaks," Daniel Pace says.
* 6 Tbsp. vegetable oil
* 1 large onion
* 24 oz. rib eye or eye roll steak
* 8 oz. cheese
* 4 crusty Italian rolls
* Sauteed, sliced sweet green and red peppers, optional
* Sauteed, sliced mushrooms, optional
* Ketchup, optional
Heat iron skillet or nonstick pan over medium heat; add 3 tablespoons oil. Saute
sliced onion to desired doneness. Add remaining oil and saute thin slices of
meat quickly on both sides. In double boiler or microwave-safe dish, melt cheese
(Cheez Whiz recommended, but American or provolone is fine). Divide meat into
4 equal portions, place into rolls, add onions and pour cheese over top. Garnish
with sweet peppers, mushrooms and ketchup, if desired.
