Reader responds: Go on 'cooking binge' after shopping
01:18 PM EST on Tuesday, January 15, 2008
We're retired, and new to Rhode Island, but Jerry and I know about needing to pinch pennies. Although we occasionally treat ourselves to dinner out, we've found that a restaurant breakfast can be a pleasant start to a day and far more economical. Sometimes, enjoying a "late lunch" at one of the many fine restaurants in Rhode Island can also be a bargain and allows us to cut calories by combining our lunch and dinner.
One thing that works best for us is to go on a cooking binge right after we shop. If I get ground meat on sale I can make up meat loafs, meat balls and chili for the freezer. I always cook at least four servings, so I have two meals for the work of one. By roasting several things at once I save on gas, work, and clean up. Having meals already to go in the refrigerator or freezer makes it less likely we will go out because we are too tired to cook or order in for the same reason. I get a million meals from a roast chicken and after Thanksgiving I steamed my turkey carcass and made a very delicious chili and a turkey gumbo.
