GRILLED LEMON-HONEY SHRIMP SKEWERS
3 tablespoons honey
1 tablespoon Dijon mustard
1 lemon, juiced
1 garlic clove, minced
1 pound peeled and deveined shrimp, patted dry
Preheat the grill.
In a bowl, combine the honey, mustard, lemon juice and garlic and stir well to combine. Reserve half the mixture.
Thread shrimp onto skewers. Brush generously with honey mixture on both sides. Place skewers on the grill and cook for 2 to 4 minutes per side, brushing frequently with sauce during cooking.
Remove to a plate and drizzle with reserved honey mixture, turning skewers to coat both sides before serving. Makes 4 servings.
Per serving: 175 calories (11 percent of calories from fat), 23 grams protein, 16 g carbohydrates, trace fiber, 2 g fat (trace saturated), 173 milligrams cholesterol, 216 mg sodium.
