Former Rhode Islander has cookbook of Back Home Recipes

For a new look at local food we have Ray Testa’s Rhode Island Favorites: Back Home Recipes. It’s self published by a former Rhode Islander who now lives in Royse City, Texas. There are more than 200 recipes, many written by home cooks so they are easy to follow and full of familiar ingredients.
Testa has a Web site about all things Rhode Island called pagesintime.com/ri. He said the cookbook evolved as a result of the e-mails he received on his Web page, which pertains to the food, places, people and nostalgia of the Ocean State. People are hungry for chow mein sandwiches, hot wieners, clam cakes and the wine biscuits that they can’t get when they move from New England. So Testa thought why not put together recipes, many his own, for these foods and sell a cookbook.
