SIMPLE CLAM CAKES 1 ¾ cups flour
1 teaspoon salt (or less to taste)
3 heaping teaspoons baking powder
1 cup clam juice
1 can chopped clams
Oil for deep-frying
Sift together
flour, baking powder and salt. Add clam juice and clams. Stir until smooth.
Drop by tablespoons into deep hot oil and fry 4 to 5 minutes or until golden
brown.
