Recipes for a Rhode Island Summer

QUAHOG CLAM CAKES
2 cups flour
1 tablespoon sugar
2½ teaspoons baking soda
½ teaspoon salt
1/8 teaspoon pepper
1 egg
½ cup whole milk
½ cup quahog broth
¾ cup chopped quahogs

Combine ingredients and fry in a deep fryer. I use an ice cream scoop to shape the cakes, using about half a scoop for one cake.
