Recipes for a Rhode Island Summer

This makes at least five dozen and is a very dependable recipe.

5 DOZEN CLAM CAKES
5 cups flour (King Arthur preferred) sifted
2 tablespoons baking powder
1 teaspoon salt
½ teaspoon pepper
5 eggs slightly beaten
¾ cups milk
2 cups quahaugs chopped in food grinder
1 cup quahaug juice

Mix dry ingredients together first. Add slightly beaten eggs and milk. Add quahaugs and juice last. Mix together jusdt enough to blend, do not beat until smooth, this makes tough clam cakes. The batter shoudl be the consistency of whipped potatoes and a few lumps are all right. Add more juice if too thick.

Drop in 375 degree corn oil using small drops with an ice cream scoop. When brown on one side, they will flip over by themselves if the dough is right.
