Recipes for a Rhode Island Summer

CLAM CAKES: Two family recipes
2 cups unsifted flour
2 tablespoons baking powder
1 teaspoon salt
1 tablespoon sugar
1 egg, beaten
½ cup milk
½ cup clam juice
1 cup minced clams

Mix the dry ingredients. Mix egg with milk and clam juice. Combine the wet and dry ingredients and stir in clams. Drop into hot oil by the tablespoon.

This recipe was used at Cross Mills Volunteer Fire Co. by my aunt when she did the fund-raising suppers.

CLAM CAKES
2 eggs, slightly beaten
1 cup chopped clams
1 teaspoon salt
1 teaspoon pepper, or to taste
1 cup milk (or ¾ cup milk and 1/4 cup Schaefer beer)
2 cups flour
3 teaspoons baking powder
Fat for frying

Ingredients must be added in order. Stir clams into eggs, then add salt, pepper, milk, flour and baking powder. Heat fat in deep fryer and drop spoonfuls of batter into the fat. Cook until done.
