1988 TURKEY LEG BAKED WITH CRANBERRY STUFFING
1 turkey leg
1 turkey wing
2/3 cup cranberry juice cocktail
1/4 cup orange juice
4 tablespoons butter
2/3 cup water
2 tablespoons brown sugar
3/4 cup chopped raw cranberries
2 cups packaged herb seasoned stuffing mix
Preheat oven to 325 degrees. Place turkey on large piece of heavy foil. Bring up sides of foil. Place in bottom of large baking pan. In small saucepan, combine cranberry juice cocktail, orange juice and 2 tablespoons butter.
Simmer over low heat until butter is melted. Spoon some of mixture over turkey. Sprinkle with salt. Seal foil securely to form tight package. Roast about 2 hours, spooning mixture over turkey every 20 minutes, until meat is fork tender.
Stuffing: In medium saucepan, combine water, sugar and remaining butter. Cook, stirring over medium heat, until mixture boils. Add cranberries, lower heat, simmer 5 minutes. Remove from heat. Stir in stuffing mix until well-blended. Form into balls and place stuffing on large piece of foil. Seal package. Place in baking pan during last hour turkey is in oven. Serves 2.
