Thanksgiving
16 large unpeeled cloves garlic
1 tablespoon margarine or oil
1/2 teaspoon dried basil
1/4 teaspoon dried oregano
1/4 cup plus 1 tablespoon all-purpose flour
2 cups chicken broth
1 cup degreased turkey drippings
1/4 cup dry white wine
1/2 teaspoon salt (omit if broth is salty)
Place garlic cloves on a baking sheet, and bake at 350 degrees for 2 0minutes; let cool. Squeeze each clove to extract garlic pulp; discard skins. Heat margarine or oil in a medium-size heavy saucepan over medium heat. Add garlic pulp, basil and oregano and cook 1 minute. Stir in flour, and cook 1 minute, stirring constantly with a wire whisk. Gradually add chicken broth, drippings, wine and salt, stirring constantly. Bring to a boil, stirring. Reduce heat and simmer, uncovered, 2 minutes or until thickened.
Makes 3 1/3 cups: 58 calories per 1/3 -cup serving
