Gluten-free turkey dressing

1/4 cup butter
1/2 cup onions, chopped
6 cups soft gluten-free bread crumbs
1/4 cup chopped fresh parsley
1 cup diced celery
1 tablespoon sage, or to taste
3/4 teaspoon salt
Melted butter or stock
Melt butter in a skillet. Saute onions and celery for 5 minutes. (If you wish to include the cooked giblets, saute them with the onions). In a large bowl, toss the bread cubes with the seasonings, then add the sauteed mixture and enough extra melted butter or stock to moisten very slightly.
GLUTEN-FREE MIX
This is a heavy mix and leaves a slightly grainy taste in the baked product, but the mix exchanges cup for cup with wheat flour in adapting recipes. Because of its low protein count, you must add extra protein and/or leavening (egg whites, dry milk powder or a nondairy substitute, gelatin or egg replacer).
GLUTEN-FREE MIX FORMULA
2 parts white rice flour
2/3 parts potato starch flour
1/3 part tapioca flour
For 9 cups:
6 cups white rice flour
2 cups potato starch flour
1 cup tapioca flour
