2000 SPINACH BAKED POTATOES
4 large baking potatoes
1/2 cup skim milk, warmed
1 cup fat-free cottage cheese
1/4 teaspoon garlic powder
2 cups chopped spinach, cooked, drained
1/4 cup Parmesan cheese
1/2 cup reduced fat shredded cheddar cheese
Preheat oven to 400 degrees. Lightly spray baking sheet with nonfat cookie spray. Pierce potatoes several times with fork. Bake 1 hour (or microwave on high 20 to 25 minutes, until cooked through). Remove from oven and cool slightly.
Cut potato in half and scoop out pulp. In medium bowl, combine potato pulp with warm milk; mix until smooth. Stir in cottage cheese, garlic powder, spinach and 2 tablespoons Parmesan. Spoon into potato skins and sprinkle with remaining Parmesan and cheddar cheese. (Can prepare ahead to this point.) Place on sprayed baking sheet; bake at 400 degrees for 15 to 20 minutes, until cheese melts. If potatoes are prepared ahead of time and refrigerated, bake the cold potatoes 25 to 35 minutes at 400 degrees.
Serves 4, about 290 calories each.
