Thanksgiving
2 cups cooked, cubed turkey or chicken
1 can cream of celery soup, undiluted
2 cans (15 ounces each) mixed vegetables, drained (or 4 cups cooked frozen
mixed
vegetables)
1 1/2 cups chicken or turkey broth
1 stick margarine, melted
1 1/2 cups Jiffy biscuit mix
1 1/2 cups milk
Mix turkey, undiluted soup, vegetables and broth. Set aside. Coat a 9-by-13-inch casserole with melted margarine. As my oven is heating, I put margarine in the casserole and let it melt in the oven. I pour out any excess when the casserole is fully greased, and reserve it to use for making the biscuit topping.
Pour vegetable/turkey mixture into greased casserole.
Blend Jiffy mix, milk and remaining melted margarine. Blend until almost smooth. Pour over vegetable/turkey mixture. Bake 1 hour at 350 degrees.
