Thanksgiving
1991 QUICK TURKEY OR CHICKEN FAJITAS
2 teaspoons vegetable oil
1 large onion, sliced
1 red or yellow pepper, thinly sliced
1/4 teaspoon each ground cumin, paprika, cayenne pepper, garlic powder, dried
oregano and dried thyme, crumbled
1/2 cup canned chicken broth
1 1/2 to 2 cups shredded cooked turkey or chicken
Warm flour tortillas
1 tomato, chopped
1 cup purchased salsa
Heat oil in heavy large skillet over medium heat. Add onion and pepper and saute until almost tender, about 10 minutes. Add spices and continue cooking 1 minute. Mix in broth and bring to boil. Add turkey or chicken and stir until heated through. Spoon mixture into tortillas. Top with tomato. Roll up. Serve, passing salsa separately. Makes about 5 servings.
