Pastry for 1-crust pie
1/4 cup butter
3/4 cup granulated sugar
1 teaspoon vanilla
2 tablespoons flour
3 eggs
1/2 cup Kahlua (coffee liqueur)
1/2 cup dark corn syrup
3/4 cup evaporated milk
1 cup whole or chopped pecans
Whipped cream and pecan halves for garnish, optional
Line a 9-inch pie pan with pastry. Chill. Preheat oven to 400 degrees. In large bowl, cream together butter, sugar, vanilla and flour. Mix well. Beat in eggs one at a time. Stir in Kahlua, corn syrup, milk and pecans. Mix well, pour into pie pan and bake for 10 minutes. Then reduce heat to 325 degrees and bake until firm, about 40 minutes.
Chill. Garnish with whipped cream and pecan halves if desired. Makes 8 to 10 servings.
