Thanksgiving
2 cups flour
1 cup sugar
1 1/2 teaspoons each baking powder and baking soda
1 teaspoon salt
1/4 cup solid shortening
1 tablespoon grated orange zest
3/4 cup orange juice
2 eggs, beaten
1 cup coarsely chopped cranberries
1/2 cup chopped walnuts
Sift together dry ingredients. Cut in shortening with pastry blender or forks. Combine orange zest, juice and eggs. Add to dry ingredients. Mix just enough to moisten. Fold in cranberries and nuts. Turn into greased 9x5x3-inch pan. Bake at 350 degrees for 1 hour or until bread tests done. Turn out and cool on rack.
