Thanksgiving
1990 SPINACH BALLS
10-ounce package frozen chopped spinach
1/2 cup fine bread crumbs
1 egg, lightly beaten, or egg substitute
1/4 cup part-skim ricotta cheese
1/4 cup grated Parmesan cheese
2 green onions, chopped
1/4 teaspoon cumin or oregano
2 teaspoons fresh lemon juice
Preheat oven to 400 degrees. Cook spinach. Drain, cool and squeeze out excess
liquid. Stir in remaining ingredinets. (Add a little garlic or garlic powder
if desired.) Form
into 1-inch balls. Place on nonstick baking sheet. bake 12 minutes or until
lightly
browned. Makes 15 appetizers (5 servings). Three balls have 103 calories, 4
grams fat.
Exchange: 1/2 starch, 1 vegetable, 1/2 medium-fat meat.
